Asti Caffe's Fruitti De Mare

An Italian Take On A Seafood Medley

Chef Sean Gates from Asti Caffe - located at 411 North Salina Street in  North Syracuse- shares this recipe for Fruitti De Mare. The recipe is a full seafood medley combining shrimp, clams, muscles and calamari all into one delicious dish. This recipe is ideal for two people.
 

Ingredients

1 Spanish onion (white)

4 garlic cloves crushed and chopped

1 oz cherry peppers (or your favorite spice)

2 oz fresh basil lightly chopped

2 oz fresh parsley lightly chopped

1lb shrimp

12 clams

12 mussels

10 oz calamari (cut into rings)

1 lb of linguini

1 jar of your favorite marinara

Salt and pepper

White wine

1 stick of butter

 

Instructions

Pasta:

Start out by filling a pot of water enough to submerge the pasta 90%. Add a tablespoon of salt and a teaspoon of oil.

Bring to a boil, add the pasta and move around every minute or so. Until cooked to your liking.

Fruitti:

Start out by sauté the onions for 3-4 mins on medium heat. Once translucent, add the garlic and cook for another 3-4 mins, or until garlic starts to brown.  

Add a cup of the white wine along with the clams. Cook until the wine has reduced by half, at this point the clams should be starting to open and release their natural juices, add the mussels and the marinara and put to low simmer.

Once the liquid starts to simmer, add the shrimp and your cherry peppers. Once the shrimp is almost all the way cooked add your calamari and stir the sauce around.

Add half of the stick of butter and stir in the butter until it's part of the sauce. The butter just adds a richness to the sauce. You don't have to if you don't want too.  

Take all the seafood out, add the pasta to the sauce and the fresh herbs. And season to taste. Put the pasta and sauce into a bowl and serve. Add some more herbs to brighten the dish.
