Chef Fabio Santalucia’s restaurant La Buona Cucina is located at 100 Farrell Road in Syracuse. This morning, Fabio showed Sistina his recipe for Chicken Caprese with Prosciutto.
½ Chicken breast (1 lobe) split in half and cut in four medallions
8 thin tomato slices
4 slices of prosciutto
8 thin slices of fresh mozzarella
Extra virgin olive oil
4 Oz white wine
4-6 Oz chicken broth
4 garlic cloves (chopped)
Flour (for dredging)
Dredge the chicken medallion in flour.
With your burner at medium, heat the oil in a frying pan and cook the chicken medallions to a light golden on both sides.
Add the garlic, let it cook for a minute; season with salt and pepper, add the wine and let it reduce, (one minute or so).
Top the medallions with the prosciutto, fresh basil leaves and tomato slices.
Season the tomatoes with salt, black pepper, and oregano.
Finish it off with fresh mozzarella, and a dash of pesto (if you want). Then add the chicken broth, put the lid on and cook until the mozzarella is melted.
Serves 2-4 people. Enjoy!
