Basil Leaf's Filet Morrelle

4 4oz. filets 
2 Cups Mushroom 
Roasted Garlic 
4 Hot Cherry Peppers 
1-Cup Olive Oil 
3 Cups Beef Stock 
2 Cups escarole - seasoned with garlic prosciutto 
1 Cups mozzarella
Romano cheese + Bread Crumbs 
Chives for Garnish 

-In a sautee pan heat oil for 1 min 
-add filets, brown on both sides, Remove from pan 
-add mushrooms, cherry peppers, roasted garlic
-sautee 1-minute add Beef Stock, let reduce 
-add half pad of floured butter, stir until gravy-like
-In a pan for oven, put filets on, add greens on top + cheese. 
-Melt cheese on filets and pour sauce over.
