Braised Beef Pizzaiola with Red Sauce & Cooked Rappi

A Chef from Wegmans shared two recipes with us: Braised Beef Pizzaiola with Red Sauce, and Cooked Rappi.  Both can be found in the new 'menu' magazine, plus at the Wegmans website.  Enjoy!

Braised Beef Pizzaiola with Red Sauce
2 Tbsp Wegmans Extra-Virgin Olive Oil
1 pkg (about 1 lb) Wegmans Ready to Cook Beef for Pizzaiola, keep strings on
Salt and pepper
2 cloves Food You Feel Good About Peeled Garlic, sliced
1 can (28 oz) Italian Classics Crushed Tomatoes with Italian Herbs
1/2 tsp dried oregano
1/4 cup Italian Classics Grated Parmesan Cheese

1.Heat oil in pan on MED-HIGH; add beef. Brown on all sides, about 5 min. Season with salt and pepper. Remove from pan.

2.Add garlic; cook 1 min. Stir in tomatoes and oregano.

3.Return beef to pan; bring to simmer. Lower heat to MED. Simmer, covered, 40 min until beef reaches internal temp of 165 degrees and is tender.

4.Cut and discard strings. Serve with pan sauce; sprinkle with cheese.

Cooked Rappi
6 cups water
Juice of 1 lemon (2-3 Tbsp)
6 cloves Food You Feel Good About Peeled Garlic, minced (2 Tbsp)
1 Tbsp salt
1/2 cup Wegmans Pure Olive Oil
1 pkg (12 oz) Food You Feel Good About Fresh Chopped Rappi
3 Tbsp Italian Classics Shredded Italian Blend Cheese (Cheese Shop)

You'll Need: Braising pan

1.Add water, lemon juice, garlic, salt, and oil to braising pan on HIGH.

2.Add rappi; bring to boil. Cover.

3.Cook 8-10 min, until rappi is tender and has changed color.

4.Use slotted spoon to transfer greens to serving dish. Sprinkle with cheese.
