Chicken Giovanni

Basil Leaf's special Chicken Giovanni
Serves 2-4 People

2 large chicken cutlets - breaded & pan fried
1/2 cup ricotta - mixed with grated cheese, eggs, parsley, salt & pepper
41g eggplant cutlets - breaded & pan fried
Quart of marinara sauce
2 cups of mozzarella
2 tbs pecorino romano
4 cups seasoned crumbs

- Preheat oven to 425 degrees
- In a large skillet fry chicken cutlets with butter & olive oil until lightly brown on both sides
- Remove the chicken and place it on paper towels
- Do the same with the eggplant cutlets
- On a hot plate, line the bottom with marinara sauce
- Place the chicken on top, then layer the ricotta and eggplant
- Cover with more marinara sauce, pecorino romano, and grated mozzorella
- Bake for 10 minutes, or until the cheese starts browning
