Chitarrine Alla Pecorara

Chef Fabio from Fabio's Autentico Ristorante Italiano in Cortland shares his recipe for 'Chitarrine Alla Pecorara' - guitar spaghetti sheppard style.

'Chitarrine Alla Pecorara'

Ingredients (for 4 people)
1lb of homemade guitar spaghetti (or your favorite type of pasta)
3oz of eggplant (diced)
3oz of red pepper (diced)
3oz of zucchini (diced)
1/2 medium onion (chopped)
2Tbsp extra virgin olive oil
5oz ricotta cheese
2 cup tomato sauce
Grated pecorino cheese
Salt, pepper and parsley

Directions
In a large skillet, sauté the onion in olive oil, then add the diced vegetables and stir-fry over a low flame and cook for 15 to 20 minutes (until it is tender & lightly browned).  Add salt and pepper towards the end.

Boil lightly salted water and cook the pasta al dente. Stir in the sauce with the vegetables, and then add the ricotta. Combine with the drained pasta and mix.  If necessary, add a little of the cooking water.
 
Put in a serving dish and garnish with little dollops of ricotta, grated pecorino cheese and fresh parsley.
