Dolce Vita World Bistro's Seasonal Salad

Chef Marc from Dolce Vita World Bistro shares his recipe for a 'Seasonal Salad.'  The restaurant is located on East Genesee Street in Syracuse, near Syracuse Stage.


4 cups- Diced apples
3 cups- Dried cranberries
1 ½ cups- Crushed walnuts
½ cups - Goat cheese
1 teaspoon- Fresh ground cinnamon
1 ½ -2 cups – Honey
4 cups- Oil
¼ cups- Apple cider vinegar

To begin, prepare the apples: peel and dice to desired size. Then prepare your lettuce. Spring mix is preferred but you can use what you like.  Next, toast the walnuts for 5-10 minutes, depending on size, and watch for them to turn golden brown and then let them cool. Then add the diced apples on top of the lettuce and then the dried cranberries.  After the walnuts have cooled, sprinkle them over the top. Next, add the goat cheese and fresh ground cinnamon.

For the Dressing: In a food processor, pour in the Honey and apple cider vinegar and mix at high speed, slowly adding in the oil while mixing at high speed.
