"Memphis" BBQ Rub and Sauce

Actor Joey Elrose is a downstate native who is currently starring in the national tour of "Memphis."  The show plays Syracuse through Thursday night, and you can find more information and buy tickets by clicking here.

The city the show is named for is famous for it's BBQ, and Joey showed us how to make some!  He used the dry rub and wet sauce on chicken, but you can use it in any way you'd like.

"Huey Calhoun" Dry BBQ Rub

2 cups dark brown sugar
1/2 cup of kosher salt
1/2 cup sugar in the raw (turbinado sugar)
1/4 cup of paprika
1tbsp black pepper
1 tbsp. White pepper
1 tsp anchor chili powder
1 tsp cumin
1 tsp ground celery seed
1/2 tap cayenne pepper

"Memphis Hockadoo BBQ Sauce"

2 cups of ketchup
1 cup water
5 tbsp. Brown sugar
1/2 cup white wine vinegar
3 tbsp. White sugar
2 tbsp. Honey
1 tbsp. Orange juice
1 tbsp. Soy sauce
1 tbsp. Mustard
1 tbsp. Garlic powder
1/2 tbsp. Black pepper
1 1/2 teaspoon cornstarch
1 teaspoon cayenne pepper
