Sicilian Pasta Fagioli

  • Olive oil 1/2 cup
  • Garlic tbl spoon
  • Onion 1/2 cup
  • Red pepper- for taste
  • 2 cans cannellini beans
  • 2 cups Ditalini pasta
  • 1 cup grated romano
  • Fresh basil 1/4 cup chopped
  • Chicken broth- quart or so
  • Tomato sauce- 1/4 cup (more if you like it redder)
  • Salt and pepper for taste

In a small sauce pot add oil, onion, garlic, and red pepper. Fry about 1-2 minutes, add beans. Sautee for 2 minutes then add stock, sauce, basil, salt and pepper, and cheese. Simmer for 5 minutes. Serve.
