Simple Summer Salad
- 2 large cucumbers
- 1/3 cup red wine vinegar
- 1 tbsp stevia (or Splenda, or monk fruit, etc.)
- 1 tsp salt
- 3 large tomatoes
- 2/3 cup coarsely chopped red onion
- 1/2 cup chopped fresh basil leaves
- 3 tbsp olive oil
- salt and pepper to taste
Add all of the ingredients together and enjoy!
