Simple Summer Salad

Ingredients:
  • 2 large cucumbers
  • 1/3 cup red wine vinegar
  • 1 tbsp stevia (or Splenda, or monk fruit, etc.)
  • 1 tsp salt
  • 3 large tomatoes
  • 2/3 cup coarsely chopped red onion
  • 1/2 cup chopped fresh basil leaves
  • 3 tbsp olive oil
  • salt and pepper to taste
Preparation:
Add all of the ingredients together and enjoy!
