Three Cheeses Homemade Ravioli Cacciatora

Recipe serves 4 people

1lb of ravioli
Half of a large onion (julienned)
2 fresh bell peppers, red and yellow (or whichever you prefer)
2 sausage links (sliced)
4-6 canned plum tomatoes
12-18 black olives (split)
Capers (to taste)
2 oz extra virgin olive oil
Dry white wine
4 bay leaves
Salt, pepper, oregano, parsley (chopped)
Grated Parmigiano or Romano cheese


While cooking the ravioli in a pot of lightly salted boiling water, heat the olive oil in a sauté pan and

lightly brown the sausage (keep it on medium heat).  Add the garlic, onions and the fresh peppers, and when
tender, add the capers, black olives and the plum tomatoes.  Toss all together and season with salt,
pepper, oregano, bay leaves, parsley and a generous splash of white wine. Let it cook for a minute or
so then add your raviolis, toss it, cover and let cook for 3 – 4 minutes.  Add a little pasta water if
needed. Serve garnished with grated cheese and fresh parsley.
