Linguini alla menta con scampi e zucchine

Linguini with prawn, mint and zucchini 
serve 4 people 
1lb homemade linguini (store bought works to) 
1lb prawn 
2 medium zucchini (cubed) 
1 pint grape tomatoes (split long way ) 
3 cloves chopped garlic 
4-5 fresh mint leaves (chiffonade) 
4oz cognac or brandy 
2oz Extra virgin olive oil 
1tsp butter 
1cup seafood stock (clams juice or pasta water is fine) 
Salt pepper and parsley to taste 

While you are cooking the pasta, 
in a large sautéed pan a medium high ,heat the olive oil and cook the zucchini to a nice deep golden then add the garlic and prawn 
(peeled and deveined) splash with cognac or brandy (keep your pan away from the stove when you are doing that, than put it back on it may flame a bit) add the butter, your stock or some pasta water, season with salt and pepper and let simmer until the shrimp are almost done, a this point, add your pasta (cooked al dente), the grape tomatoes and the fresh mint let the flavors bond for couple of minutes adjust your seasoning and serve garnished with fresh mint and parsley, Linguini with zucchini grape tomato and prawn…..done
