Wegmans Cod and Veggie Spaghetti

A Healthy Seafood Recipe with a Kick

Wegmans Chef Nick Punch is in the kitchen cooking up a healthy seafood and vegetable recipe with a tasty sauce.

 

Ingredients:

1 pkg (about 1 lb) Wegmans Veggie Spaghetti (Fresh Cut Veggies)

2 Tbsp Food You Feel Good About Basting Oil, divided

Salt and pepper to taste

4 fillets (about 6 oz each) Food You Feel Good About Wild Caught Alaska Cod, thawed

1 container (4 oz) Food You Feel Good About Roasted Sweet Red Pepper Sauce (Meat Dept), warmed

 

Instructions:

 

  1. Preheat oven to 450 degrees. Add veggie spaghetti and 1 Tbsp basting oil to large bowl; season with salt and pepper. Toss to combine. Arrange veggies evenly in bottom of baking dish.

  2. Season cod with salt and pepper; drizzle with remaining basting oil. Place filets on top of veggies in pan.\

  3. Bake about 20 min, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of cod), and veggies are tender. Remove from oven; let rest 2 min. Serve with warmed red pepper sauce.
