Wegmans Chickenless Parmesan

Tasty Alternative for Vegetarians

Wegmans Chef Erin Bucknell joins us for another Wegmans Wednesday, this time she’s cooking up a delicious alternative to the classic chicken parmesan.

 

Ingredients:

1 pkg (12.7 oz) Food You Feel Good About Don't Be Chicken Meatless Chicken Style Breasts (Frozen Foods)

1/2 cup Food You Feel Good About All Purpose Flour

3 Food You Feel Good About Large Eggs, whisked until foamy

1 cup Food You Feel Good About Unseasoned Bread Crumbs

1/4 cup Food You Feel Good About Basting Oil

3 Food You Feel Good About Campari Cocktail Tomatoes, cored, sliced 1/4-inch

1 pkg (8 oz) Italian Classics Fresh Mozzarella Cheese (Cheese Shop), cut in 4 slices

1 pkg (about 1 lb) Wegmans Zucchini Noodles (Fresh Cut Veggies)

Salt and pepper to taste

1/2 of a 24 oz jar Italian Classics Grandma's Pomodoro Sauce

1/2 cup water

Fresh Italian parsley leaves, for garnish

 

Directions:

 

  1. Preheat oven to BROIL. Coat frozen meatless chicken lightly with flour; dip in egg to coat. Transfer to shallow bowl of bread crumbs; coat all sides. Set aside.

  2. Heat oil in large sauté pan on MED until oil faintly smokes. Add meatless chicken; cook about 2 min until golden. Turn over; cook, 6-7 min, until temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of meatless chicken).

  3. Transfer meatless chicken to casserole dish; reserve drippings in pan. Top each with 3 slices tomato and 1 slice mozzarella. Broil, about 4 min, until mozzarella is melted and golden; remove from oven.

  4. Add zucchini noodles to pan on MED-HIGH; season with salt and pepper. Cook, stirring, about 2 min. Add sauce and water; cook, stirring, about 2 min until heated through.

  5. Arrange zucchini mixture on serving platter; top with meatless chicken. Garnish with parsley.
