Wegmans Pulled Portabella Mushroom Sliders

Easy Veggie Alternative to a Classic Appetizer

Chef Brandon from Wegmans shares the recipe for Pulled Portabella Sliders.

1 pkg (14 oz) Wegmans Dinner Rolls
1 Tbsp Wegmans Pure Olive Oil
1 pkgs (1 lb) Wegmans Shredded Portabellas (Fresh Cut Veggies)
Salt and pepper to taste
1/4 cup Food You Feel Good About Memphis Style BBQ Sauce

You’ll need a 12-inch cast-iron skillet


Preheat 12-inch cast-iron skillet on MED 5 min. Slice joined dinner rolls in half horizontally (do not separate into individual rolls). Brown top and bottom sections in skillet 1 min each. Transfer to cutting board. 

Heat oil in skillet on HIGH. Add mushrooms; press down in skillet using spatula. Cook 5 min; turn over. Press down again; cook 5 min, pressing with the back of a spoon to break into smaller shreds. Season with salt and pepper.  

Turn off heat; allow skillet to cool slightly 1-2 min. Add sauce; stir to combine. 

Spread mushrooms on bottom section of rolls; layer with top section. Cut into 12 sliders.
Wegmans says to try topping the sliders with Claremont Salad located in their Market Café.
