Wegmans Chef Paul Lane is in the kitchen cooking up a fresh salmon and veggie noodle combo.
4 (6 oz each) Wegmans Fresh Farm-Raised Salmon Portions
Salt and pepper to taste
Wegmans Pan Searing Flour
1 Tbsp Wegmans Pure Olive Oil
1 Tbsp Food You Feel Good About Basting Oil
1 tsp Wegmans Salted Butter
1 container (12 oz) Wegmans Cherry Tomato Salsa (Market Cafe), warmed
Fresh cilantro leaves, for garnish
Season salmon with salt and pepper. Dust both sides with pan-searing flour; pat off excess.
Heat oil in pan on MED-HIGH until oil faintly smokes; add salmon. Cook about 3 min; turn over when salmon changes color one-quarter of way up and seared side has browned.
Reduce heat to MED. Cook, about 4 min, until internal temp reaches 120 degrees (check by inserting thermometer halfway into thickest part of salmon).
Add basting oil and butter to pan; swirl. Baste with spoon, 1-3 min, until internal temp reaches 130 degrees.
Transfer to serving platter; let rest 2 min. Serve with salsa; garnish with cilantro.
