Chicken Penne Pasta Recipe

Chef's Favorite Available at Syracuse's 1060 Restaurant

Chef John Grainger from the 1060 Restaurant, located inside the Genesee Grande Hotel on East Genesee Street in Syracuse, shares their recipe for Chicken Penne Pasta!


  • 5 oz 1” cubed raw chicken breast
  • 1 oz  Cooking oil (grapeseed or canola)
  • 6 oz  Madeira wine (reduced by half)
  • ⅓ cup peeled, seeded, large diced & roasted butternut squash
  • ⅓ cup peeled, quartered and roasted shallots
  • ⅓ cup cleaned, quartered and roasted cremini and shiitake mushrooms
  • 1.5 cup Madeira cream sauce (equal parts very rich chicken stock, reduced heavy cream by half and reduced madeira wine by half) season with chopped fresh garlic, fresh thyme, salt and pepper
  • 2.5 cups cooked/cooled penne pasta
  • ½ stick softened unsalted butter (cut into small cubes)
  • To taste       salt and pepper
  • 2 tbsp         finely chopped fresh chives
  • ¼ cup          shredded asiago cheese


In a hot pan, brown the chicken on both sides and add the wine, bring to a boil. Add the 3 vegetables and heat for 2 minutes moving around but not “mashing” the vegetables.

Add the cream sauce and bring back to a boil. Add in the pasta and butter and heat back up while moving and tossing the pasta for 2 more minutes.

Season to taste and mix in the chives. Neatly pour into a pasta bowl and garnish with asiago cheese and a fresh thyme sprig.

This recipes yields one large portion.
