Dolce Vita Chicken Roll Up

Paired With Toasted Walnut & Cranberry Stuffing and Cauliflower Mash

 Dolce Vita World Bistro's Chef Gordon Horner demonstrates how to make chicken roll up with toasted walnut and cranberry stuffing. For sides, he makes a cauliflower mash and a vegetable medley.
For a taste of Dolce Vita in your own kitchen, here’s the recipe:


1-7oz chicken breast
1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
1/4 cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup craisins
1/4 cup walnuts
1/2 teaspoon parsley 
2oz low sodium chicken stock
2oz unsalted butter

Chicken prep:

Filet and pound out your chicken breast and prepare it to be rolled up, season with salt and pepper and refrigerate until needed.


In a 10" sautee pan ad butter and walnuts and saute until toasted. Set aside and let cool. Cut bread into 1/2 cubes. In a mixing bowl add bread and drizzle with olive oil, season to taste with salt, pepper and parsley. Place in a preheated oven at 350 on a baking sheet pan. Approx 4-7 mins. Let craisins sit in 2 cups of boiling water for two mins to rehydrate. Place bread, craisins and walnuts in a mixing bowl. Add chicken stock and let absorb and incorporate into the stuffing

Cauliflower mash:

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

Place desired amount of stuffing in chicken breast and roll it up. Sear in a 10" skillet and sear on both sides, place in oven set at 350 for approx 10-12 mins. 

Serve with hot or cold cauliflower mash and your favorite vegetables.
