Chicken Caprese

Chicken Caprese

- Serves 4

- Flour for dredging

- 4 tbsp extra virgin olive oil plus 8 tbsp

- 2 lb fresh chicken breast

- 2 lb firm fresh tomatoes

- 4-5 cloves of garlic

- 4 oz fresh basil

- 4 oz fresh parsley

- 4 oz white wine

- 8 oz fresh mozzarella

- Salt

- Pepper

- Fresh oregano

- Chili pepper flakes

- Pesto (optional)

Portion your chicken, and dredge them in all purpose flour in a sauté pan. Heat the oil. Test the oil for temperature, and drizzling little flour in the pan. The flour will lightly sizzle at the right temperature. Cook to a light golden, and brown your chicken breast on both sides. Once your chicken is cooked, drain the pan of the used oil. Bring the pan back to the stove, and turn it on. Deglaze with the white wine, and add fresh extra virgin olive oil, garlic (do not cook the garlic too much,) tomatoes, basil, parsley, fresh oregano (or dry,) salt, pepper and hot pepper flakes. Cook altogether for 2 minutes. Cover the chicken with the sauce. Drop a dash of pesto on top of each piece of chicken, and then cover them with sliced fresh mozzarella. Put cover on, and let cook for 1 minute or until mozzarella is melting. Chicken Caprese done!
