Farro with Mushrooms & Roasted Tomatoes

Here's a delicious recipe from the folks at Wegmans: Farro with Mushrooms & Roasted Tomatoes!

2 Tbsp Wegmans Pure Olive Oil
1/2 cup Food You Feel Good About Cleaned & Cut Chopped Onions
1 1/4 cups (2 1/2 oz) sliced shiitake mushrooms
1 1/4 cups (3 oz) Food You Feel Good About Whole White Mushrooms, 1-inch dice
1 pkg (8 oz) Food You Feel Good About Farro
1/4 cup Wegmans Soy Sauce
2 cups Food You Feel Good About Vegetable Culinary Stock
1/2 cup roasted red tomatoes (Mediterranean Bar), 1/4-inch dice
1 Tbsp chopped Food You Feel Good About Italian Parsley
Rosemary sprigs for garnish

You'll Need: Braising Pan

Preheat oven to 400 degrees.

Add olive oil to braising pan on MEDIUM-HIGH. Add onion; cook, stirring, 2 min, until onion begins to soften. Add mushrooms and farro; cook, stirring, 2-3 min to toast farro. Add soy sauce and stock. Bring to a simmer on HIGH; cover.  
Transfer braising pan to oven; cook 35 min.
Remove from oven; let rest 10 min.

Stir in roasted tomatoes and parsley. Garnish with rosemary.
