(Check squash for doneness; if done, remove from oven and set aside.)remaining 2 Tbsp olive oil to braising pan on MEDIUM-HIGH. Add onion; cook, stirring, 2-3 min, until onion begins to soften. Add garlic; cook 1 min. Add grain blend; cook, stirring, 2-3 min, to toast grains. Add cranberry juice, stock, raisins, and dried cranberries to pan. Bring to simmer on HIGH; cover.squash with 2 Tbsp olive oil; arrange in single layer on baking sheet. Season to taste with salt and pepper. Roast about 30 min on a lower oven rack, stirring halfway through cooking time, until squash is knife-tender. (While squash is roasting, proceed to step 2).
