New butcher shop uses only locally produced products

There’s a new butcher shop in Manlius, but it's probably a lot different than you're used to in Central New York.
Manlius (WSYR-TV) – There’s a new butcher shop in Manlius, but it's probably a lot different than you're used to in Central New York.

Side Hill Farmers Meats and Markets is now open in the shopping plaza right behind Sno Top in the village.

Glance over the meat case and you may find your favorites, but they'll also be surrounded by cuts you've probably never heard of.

Managing Chef Greg Rhoad said, “People in general don't know enough about it, so for us its as much about selling the product as it is educating people about how to cook things, what to look for, what to buy.”

But even Rhoads, who has been an executive chef for years, knew he needed a trained butcher.

Kevin McCann was trained at the Culinary Institute of America in New York City. “You bring them through the description and then they buy one and come back and they tell you that was a really unique steak experience,” he said.

McCann doesn't just cut meat, he knows how to get the most out of each whole steer that comes in to the shop.

“We're making stock from the bones, all the chopped meat we do, all the sausage making we do, all the cured prepared items we do, all with the idea of using everything,” McCann said.

Another interesting aspect is that most of the products they have in the shop come from farms in Madison County.

Owner Paul O'Mara said, “People that don't want to buy a whole cow or half a cow can come in and buy a couple of steaks, so we opened a store and we're really excited."

O'Mara says it's rewarding for the farmers in the six farm co-op to come in and see the team work with customers.

One customer, Steve Youngentob, said, “They have cuts of meat you can't get anywhere else in Syracuse anymore unless you really hunt."

Greg Rhoad said, “It's not just about the meat and its local, its how it’s being cared for and how it’s being taken care of and raised."

Side Hill Farmers Meats and Market is not just selling beef, they also offer pork, chicken, turkey, and lamb produced in Madison County as well as eggs, cheese and milk.
