3 (about 1 1/4 lbs total) zucchini
2 Tbsp Wegmans Organic Basting Oil
Salt and pepper to taste
1 container (8 oz) Food You Feel Good About Lemon Dill Hummus (Dairy Dept), divided
Food You Feel Good About Crumbled Plain Feta Cheese (Cheese Shop), to taste
Italian Classics Basil Pesto Sauce, to taste Roasted red tomatoes (Mediterranean Bar), to taste
1. Preheat grill on MED. Trim ends of zucchini; halve lengthwise and scoop out seeds.
2. Brush inside of zucchini with basting oil; season with salt and pepper. Grill, cut-side down, 4-5 min, uncovered, until edges are slightly charred and caramelized. Transfer to clean work surface.
3. Fill each zucchini with 2 Tbsp hummus; top with feta, pesto, and roasted tomatoes. Grill, uncovered, 10 min or until filling begins to bubble.
