The Ridge’s Chittenango Burger With Tomato Jam


At The Ridge in Chittenango, the burgers are perhaps the most popular item on the menu.  And now, Chef Chance Bear has come up with a new one.

“We have so many farms and cool things where the restaurant is locataed, you know what, I want to name a burger after Chittenango and I’m going to make it like a cool burger!”

And so, Chef Bear created the “Chittenango Burger.” He cooks an 80/20 patty in a saute pan with some oil and butter, and tops it with cheese, an egg, and his homemade tomato jam.

“It adds like a new depth of flavor” he says of the jam.  “So you have like sweet and salty and a little bit of sourness to it which kind of makes like a delicious pyramid of flavors.”

Here’s the recipe for the tomato jam:
1 Tbsp oil
1 diced tomato 
1/4 cup diced onion 
1 Tbsp minced ginger root
1/2 cup Apple cider vinegar 
1 Tbsp sugar 
1/4 cup tomato paste 
1 clove of garlic 

In a heavy bottom pan add oil, diced tomato, onion, garlic, and ginger. Cook until onions are translucent. Next add tomato paste, apple cider vinegar, and sugar.  Let the jam come to a simmer and reduce by 1/2. Then let it sit at room temperature until it’s cool.
