When Congress Beer goes back on tap this summer, the final recipe will be months of work in the making.
The Willow Rock Brewing Company and the Onondaga Historical Association have partnered to bring the famous brand back.
It won’t be an exact match of the decades-old recipe, but modern-day drinkers wouldn’t want it to be, according to Willow Rock’s co-owner and co-brewer, Rockney Roberts.
Instead, it will be reinvented with influence of the original recipe pulled from the OHA archives.
Thursday, three test batches of the prototype recipe were tasted so that brewers can tweak what will become the final recipe.
Willow Rock hopes to have the beer on tap in August and will install a canning line to can the beer.
The Onondaga Historical Association will discontinue its Haberle Congress Beer merchandise as a show of support for the new Willow Rock version.
